Lately I have been a yoyo. One day I’m eating healthy then the other day I’m bombing and eating junk. I’m don’t want to blame it on anything per se but the hussel and bussel of working in a restaurant has thrown my appetite and eating habits way out of wack. Sometimes (oaky most times) its super hard to stop and take a break during work to listen to what my body is saying. Lately my body has been craving exercise and clean foods. I’ve been extremely passionate about clean and healthy eating, but lately I’ve been slacking, big time. So its time for me to jump back on the band wagon and treat my body with the respect that it deserves. So I’ve been eating as much of these Kale Salads as I possibly can! This simple salad is hands down one of my favorite salads…like ever! And the great thing is its super simple! WIth just a few ingredients you can have this salad on your table in minutes! Plus the more kale you can eat the better. Kale is one powerful food! It naturally detoxifies, its a great anti-inflammatory food, is high in fiber and low in calories. I can keep going on and one about the benefits of kale. I’ve been an avid juicer for awhile now and kale is one green powerhouse to add to juice.
My favorite Kale Salad with Parmesan Crisps:
1-Bunch of Kale
1/4- Cup EVOO
1/4-Cup Lemon Juice, fresh squeezed
1/2-Cup Parmesan Cheese, grated
Salt, Pepper and Red Chili Flakes to taste
Pre-heat your oven to 400 degrees F.
Wash, clean and dry the kale. In a small bowl whisk together the EVOO and lemon juice. Place the Kale in a large bowl and drizzle the dressing over. Be sure to not over dress your salad, this recipe allows for extra. Let the salad sit for about 10 minutes.
While the salad is mingling with the dressing. Take a half sheet tray and line it with a Silpat. Then place 2 TBS mounds of the grated parmesan on in. Spacing them about 1.5 inches apart. Bake them in the oven for about 10-15 minutes. Once they are golden brown, let them cool for a bit, then remove them.
Season the salad with salt, pepper and red chili flakes. I like lots of chili flakes! Then top with the parmesan crisps! Viola! You are done!
